Flavoured Water

Zabaglione

Ingredients (serves 4)

5 egg yolks

0.25 cup of sugar

0.5 cup of marsala

0.25 cup of dry white wine

Method

  1. Combine egg yolks and sugar in top of double saucepan. Beat for a few minutes off heat, with rotary beater or electric beater until well combined.
  2.  Put mixture over simmering water. Gradually beat in half the marsala and half the white wine, beat well; gradually beat in the remaining marsala and wine.
  3.  Beat constantly for about 10 minutes, until thick and creamy. If mixture adheres to side of pan, quickly remove from heat and beat vigorously with wooden spoon – especially around base. Pour into individual dishes.

Variation

In place of marsala use your favourite  liqueur and top on fresh fruit!

Pollo alla Cacciatore

Ingredients (serves 4)

1.5kg chicken pieces

salt/pepper

2 tablespoons of olive oil

1 onion

1 clove of garlic

half a cup of white wine

1.5 tablespoon of balsamic vinegar

1 chicken stock cube

half a cup of water

1 teaspoon basil

1 teaspoon sugar

400g can peeled tomatoes

3 anchovy fillets

a quarter of a cup of milk

60g black olives (optional)

1 tablespoon chopped parsley

Method

  1. Cut chicken into serving size pieces, sprinkle with salt and pepper. Heat oil in pan and add the chicken. Brown on all sides. Put the chicken into an ovenproof dish.

  2. Leave about 1 tablespoon of the juices in the pan. Add a peeled and finely chopped onion and crushed garlic, cook until onion is tender. Add wine and vinegar and boil until reduced by half quantity. Add crumbled stock cube and water, stir over high heat for 2 minutes. Push tomatoes with their liquid through sieve, add to pan with basil and sugar, cook for a further minute.

  3. Pour tomato mixture over chicken pieces. Cover cook in moderate oven for 1 hour.

  4. Soak anchovy fillets in milk for 5 minutes, drain on absorbing paper. Arrange chicken pieces on serving dish and keep warm. Pour pan juices into saucepan and bring to boil, boil for 1 minute. Chop anchovy fillets finely and add to pan. Cut olives in half, remove stones. Add olives and chopped parsley to pan and cook 1 minute. Pour sauces over chicken pieces.
